Ingredients

  • 3 large egg yolks
  • ½ cup granulated sugar
  • 3 tablespoons cornstarch
  • 2 cups whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • 4 large bananas sliced
  • 1 box vanilla wafers about 11 oz
  • 1 cup whipped cream for topping

Instructions

  • In a medium saucepan over medium heat, whisk together egg yolks, sugar, cornstarch, and milk.
  • Cook while stirring constantly until the mixture thickens and coats the back of a spoon, about 8-10 minutes.
  • Remove from heat and stir in vanilla extract and butter until smooth.
  • Let the custard cool slightly before assembling the pudding.
  • In a serving dish, layer vanilla wafers on the bottom.
  • Add a layer of sliced bananas over the wafers.
  • Pour a layer of warm custard over the bananas.
  • Repeat the layers until all ingredients are used, finishing with a layer of custard.
  • Let the pudding cool to room temperature, then cover and refrigerate for at least 4 hours before serving.
  • Before serving, top with whipped cream and extra vanilla wafers for garnish.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the custard. Best enjoyed within 24 hours to keep the bananas fresh. Store in the refrigerator and serve chilled.
